Lactic Acid in Food
Lactic acid appears in foods both naturally and unnaturally.
It appears naturally in dairy products like cheese, yogurt, but also in sourdough meat products and pickeled vegetables. Natural fermentation (chemical conversion of sugars into ethanol) occurs in all of these products, therefore creating lactic acid.
Lactic acid is also produced synthetically, and then put into certain food products. Most of the time lactic acid acts as a pH regulator or a perservative, but on rare occasions it can also be used to give the product flavor.
